You can add a participant to a conversation by clicking the "Edit" button above the reply box or the participant avatar in the right-hand corner of the conversation header, next to the subject.

Once you open the participant editor, you can search for an existing contact by name or email. If the contact is not saved in your account, you can also just type the desired email address and tap "Enter" on your keyboard.
